Fruity Banana Bread Recipe

 I have been a big banana bread fan for many years now and I just love the fact its so easy to make all you need is simple ingredient's not forgetting very ripe bananas that no one seems to want to eat any more. This recipe is perfect if you have bananas that are over ripe and cake be mashed easily into this cake recipe to make delicious banana bread.
 
Banana bread is a recipe that is so simple that it can be made easily.  I love having banana bread with after my dinner on its own or with a nice cup of tea. The best thing about banana bread is it can be adjusted with a variation of different ingredients, with this bread I added some spice, raisins with cherries as a nice and sweet decoration.

Fruity Banana Bread Recipe
Serves 8-10
 
For the Bread
  • 2 Large Eggs ( I love to use Happy Eggs)
  • 150g Self Raising Flour ( I like to use Allison's Flour as its great quality)
  • 150g Caster Sugar ( I used Sainsbury's own brand)
  • 1 Teaspoon of baking powder
  • 2 Heaped Table Spoons of Raisins ( I use Sun Maid Raisins, they are my favourite)
  • 1 Teaspoon of Cinnamon


For the Topping
  • 2 Tablespoons of Icing Sugar
  • 3 Teaspoons of Water
  • Chopped Glaced cherries
 
Method
  • Preheat the oven to 200
  • Grease the bread tin with Stork margarine
  • Mash the two bananas in a bowl, this will be very easy if the bananas are ripe enough.
  • In another bowl put the sugar, flour and eggs and mix till a cake texture, once you get to this add the baking powder, banana and the raisins and then stir once more until all the ingredients are combined evenly together.
  • Pour the ingredients into the bread tin and spread evenly with a spoon and put into the oven for about 25 to 30 minutes, until bread is golden.
